Marcus sets out to to create a sandwich, with a French baguette as the foundation, to beat his all-time favourite egg and cress on sliced white. The chef prepares a classic chicken, lettuce and mayo baguette sandwich, before meeting a local baker and joining his team for a shift. He takes away a loaf of sourdough bread, which he uses to cook a croque monsieur.
